As for the selection, we normally include a variety of cheeses so that they don't repeat themselves (obviously this is more difficult for longer term subscriptions, so some cheeses may be repeated in different combinations). At the same time, if a seasonal product is available at the time of your subscription, we always try to include it in the package. You can find cow's, goat's and sheep's cheese with us, but if you let us know that you don't want goat's or sheep's cheese, we will be happy to replace it with another kind.
